Ingredients:

  • 1 cup shredded coconut, plus ½ cup for rolling

  • ¾ cup almond flour

  • ½ cup almond butter

  • 2 tablespoons maple syrup

Instructions:

  • In a bowl, combine shredded coconut, almond flour, almond butter, and maple syrup, mixing until a sticky dough forms.

  • Using your hands, roll the mixture into small, bite-sized balls.

  • Roll each ball in the extra shredded coconut until fully coated.

  • Place the balls on a plate or tray and refrigerate for at least 30 minutes to firm up.

  • Enjoy chilled, and store any leftovers in an airtight container in the refrigerator.

Pro-Tip: For an extra kick of flavor, add a pinch of sea salt or a dash of vanilla extract to the mixture before rolling into balls.
